Sorry it took so long, been busy and lazy and sick and happy. So, straight to the business. Im a waiter and a part time cook at my family's restaurant, so im sure I can get something out. O_o

Pho, and how to prepare it.

The broth itself is beef broth, made by simmering beef bones, flank steak, charred onion, and spices, taking several hours to prepare. Usually in a BIG Cauldron, approx 5-10litre? You dont prepare pho for just one serving cuz it takes so much time, instead, prepare a batch just in case you want more.

When the broth is almost done, prepare the noodles in hot water. The noodles used is white rice noodles you can get from most asian food markets.

After the broth is done, take the noodles out of the hot water and add it into a bowl with the beef broth, then add some thin cuts of meat, beef or chicken will do, the meat is also cooked by boiling separately, finally add some hoisin sauce and chopped spring onions. Voila, there you go, you've got pho.

Usually you add some lemon juice from fresh lemons or limes into it to make it better for your taste, you can leave the lemon too.
Pho is often served with a dish of vegetables, Mung bean sprouts, basil, onions, chili peppers and leaves of culantro (ngò gai in vietnamese)

+Now then, for Umi, something special.
Instead of preparing the broth with beef, you can prepare it with chicken instead. After it is done, you can add liiiittle bit of curry powder into the broth with the noodles to make it curry-ish, then smash the other seasonings into it (onions, hoisin sauce, onions). Adding fish sauce is a big bonus to all pho's. Dont forget the vegetable dish.

Also, similar with many recipes, you change it up as you like such as how long you do things or what to add in.

I have no clue on the cooking times. I just eat Smile
All I know is the broth making part is long as mess.

Personally, I'm a beef person. Beef all the way. Extra chicken is fine, but beef beef beef. And no hoison sauce for me. Dumb poison sauce.

Lots and lots of bean sprouts and culantro and onions and a bit of lime and basil but no spicy stuffs.
